I used MS Streets & Trips when I was traveling for them. It isn't MacOS, but it was convenient in that it worked with the cheapest gps you can buy (and MSS&T comes with one even). I'd just use our APC voltage inverter, run the laptop off the cigarette lighter, and keep it in the passenger seat.
